2011 Cabernet Sauvignon - St. Helena - Napa Valley
Wow nice cab. This wine comes from an awesome little 1 acre vineyard overlooking the Napa Valley just above the St. Helena-Calistoga line (on the eastern side of the valley). Hayden and I arrived to pick this fruit and get it home just as it had ripened to perfection. Nice timing indeed. We bottled this wine on January 7, 2014 after an elevage of 26 months in French Oak and aged it for almost 2 more years in the bottle before its release.
The wine itself is classic Napa Valley Cabernet with the Carini touch. The nose begins with an explosion of ripe blackcurrant and blackberry giving way to background notes of vanilla extract, spice, violets, and pepper. As you drink, more black fruit: currants, cherries, and berries continue. Supported by anise, black licorice,pepper, cedar At it's core, after 4+ years of bottle age now, the tannins are velvety and complex, and matched with a balanced acidity that preserves and highlights all of the fruit. This wine has gone through its growing pains and is ready to go now and will be through atleast 2018.
